원두 특징좁은 서아프리카 시조 계통에서 내려온 Amelonado 계열 소농 품종이 주를 이루며, 수확량이 더 높은 Upper-Amazon 교배 품종이 점점 더 많이 함께 심긴다. 떡잎은 대체로 짙은 보라색이다.
수확기주 수확기 10~3월, 중간 수확 5~8월
발효소농의 더미 발효로, 보통 5~7일간 진행한다. 취급 방식에 따라 품질 편차가 크다.
건조농가나 마을에서 멍석, 방수포 또는 높은 선반 위에 올려 햇볕에 건조한다.
풍미담백한 카카오 · 흙내음 · 낮은 산미 · 약간의 쓴맛
