원두 특징자엽 색이 다양하다. Chontalpa는 고대 멕시코 Criollo의 본고장으로 인정받는 곳으로, 일부 농가는 현지에서 'almendra blanca'라 불리는 흰콩 Criollo 계통을 유지하고 있지만, 재배되는 계통 대부분은 Trinitario와 Forastero 잡종 재료다.

발효소규모 농가의 상자 및 바구니 발효로, 발효 기간은 농가마다 다르다.
건조안마당과 높인 단 위에서 햇볕에 건조.
